I recently spoke about eating healthier, one step at a time. What do I see in my email shortly after?  An email about a site run by General Mills that also talks about eating healthier – Eat Better America (talk about kismet!).  Its basically a site created to help America eat better and live a healthier lifestyle.

What you can find on Eat Better America: Recipes, articles from health experts, articles on health and nutrition, fitness articles and plans, coupons (to GM products), and a community forum to connect with others about your health.

The site looks pretty clean and easy to use. There is a lot of information here!  Many of us want to eat healthier but honestly we don’t know where to start.  Well, there are a LOT of recipes on the site to get you started eating healthy.

And did I mention their $1,500 giveaway? Yeah, Eat Better America is giving away $1,500 to spend on groceries to one lucky person who signs up for their Healthify My Dinner Pledge.  That’s a nice incentive to check out their site.

I don’t know how healthy it actually is but one of our favorite things to eat is grilled herbed salmon with steamed broccoli. I even have neighbors who have said they will never eat salmon anywhere else again.

Just last night I steamed peas and carrots and had it on the side of some chicken breasts (marinated in soy sauce, worchestire, hot sauce, curry, cumin, black pepper, and basil).

And earlier in the week, I made Dave Lieberman’s black bean soup, substituting the bacon and grease with a little turkey sausage and splash of olive oil. Leave off the fattening garnishes and it’s still yum.

Use ground turkey in chili, burgers, and spaghetti, also increased vegetable intake and stir fry with chicken. Increase taste with herbs, not butter. Eat nuts instead of sweets like cookies or cakes. If I do get a hunger for something like pie or cake, I get it for dessert when eating out, and share it .

5 Everyday Tips

For favorite winter time healthy meal is pea soup. Nothing better than a bunch of peas, carrots, potatoes, celery and spices simmering all day with a ham bone. Very inexpensive when you have leftover ham from a holiday meal, and very healthy.

I think it’s ironic for a company that sells lots of processed flour and sugar products (Betty Crocker, Bisquick, Lucky Charms), Haagen-Dazs ice cream, Totinos pizza, etc… to try to teach us about ‘eating better’.

To their credit, the do sell healthier Cascadian Farm, Muir Glen and Progresso products.

Remember, we vote with our wallets when we buy groceries. If we buy the processed foods then manufacturers will continue making them. Many major food companies have picked up smaller organic/natural brands because shoppers are buying the products and there is a demand. Its up to us to give direction to the food companies.

And Haagen Dazs isn’t bad. Have you seen their Five line which only has five ingredients? Compare that to some other brands where you don’t know what the ingredients are.

I try to eat vegetarian two times a week by using beans, pasta, nuts, etc. I feel better but I am not ready to give up the meat full time yet.

Honestly, the healthiest purchase I ever made was my outdoor gas grill. We’ve made so many tasty AND healthy meals with the grill. Our latest favorite was a recipe for Turkish kabobs (from Weber.com). Takes about 20 minutes to prep (an extra 10 minutes to also prep some vegetables to grill), and is unbelievable!

We’ve added more whole grains to our diet. Dinner side dishes include barley and brown rice. We’ve replaced the usual bread and pasta with whole wheat ones.

My husband just made me the best Spring Greens Salmon Salad. The salmon was cooked on the bbq with lemon pepper, salt, and little olive oil. The salad had cranberries, sunflower seeds, purple onion, herbs to season, etc… We throw everything good in our salads. Topped with a little balsamic vinaigrette And served with toasted garlic sourdough bread (small slices). Delish!

Last May, I joined Weight Watchers, in an attempt to get my body to better reflect the person I’ve grown into being. 73 lbs later, I look better, can walk again (I even climbed a hill for the first time in years yesterday). But best of all, as I have lost points over the course of the year, I have changed my eating to a much more flexatarian style. I still like meat, fish, and poultry, but now I tend to use them as small components of larger dishes.

Tonight’s healthy dinner was actually made by a friend last night for a party. He sauteed some cubed Yukon Gold potatoes in the fat from some shredded slab bacon, then added some wild ramps he got at the Union Square Farmers’ Market. The meal was mostly veggies, and was utterly delicious. The only seasoning he used was salt and pepper.

Another dish I love is a stir-fry made as follows:

Heat 1 Tbsp of sesame oil in a large skillet or wok. Add 2 Tbsp soy sauce, 1 Tbsp of Splenda, sugar, honey, or the sweetener of your choice, and a half cup of shredded beef, pork, chicken, or shrimp. You can also toss in other things to cook at this point, such as cut up okra or mushrooms. When that is cooked (about 3-4 minutes), add a package of shirataki noodles – the ones I get come in little “packets”, which I just cut in half in the pan, so the noodles pull apart more easily. Once they have absorbed the bulk of the sauce, push the meat and noodles up the sides of the pan, so that you have a middle with a little of the sauce in it. Break an egg into the middle of the pan, and start stirring it together with the sauce ’til it starts to form bits. Move the meat and noodles back toward the center of the pan, and mix everything together thoroughly. Add in a pound of chopped greens (I like to use either Chinese broccoli or spinach), and stir until the greens are wilted. Split into two huge, yummy, filling portions, and eat one. You can, if your roomate or sposue is lucky, give them the other portion, or you can fridge it to reheat at another meal.

My dh and I try to follow a lower carb diet. We have eliminated enriched and processed bread and pasta.
When possible, we will eat grass fed free range meats.
My favorite meal to prepare is bison steaks and asparagus. runningmatey at hotmail dot com

I like to fix whole wheat pasta and then saute some veggies in a little olive oil. Then I just toss together and serve. I have a small garden and grow tomatoes, onions and various other veggies. I can usually find something ready to cook almost any time of the year too. It is very filling and low cal, not to mention, frugal.

18 Budgeting in the Fun Stuff

We wrap tilapia filets in tin foil with a little salt, a Kroger citrus rub, and a squeeze of real lemon and throw it on the indoor electric grill for 10 minutes on each side while making long grain wild rice. Awesome and quick dinner!

I love to prepare an “almost everything” salad. Leaf Lettuce, tomatoes, green onions, avocado, almonds and top ithis with grilled chicken=) Good Eats!

I like to grill (over propane – it’s healthier, but less tasty than over charcoal) a nice cut of organic beef along with some simple organic veggies like potatoes, carrots, and onions wrapped in foil. Super simple, quick, very little cleanup and YUMMY.
